I keep a shoebox on the bench that I call the graveyard. It’s full of heating elements and boiler bits pulled from machines that died before their time, and almost every one wears the same chalky white crust.

Scale. Calcium carbonate, baked hard onto copper and stainless by years of hot water and neglect.

The thing owners never want to hear is that the descaling schedule matters far less than what goes in the tank in the first place. Get the water right and I might see your Gaggia once a decade. Get it wrong and I’ll see it in eighteen months, element flaking, thermal fuse popped.

So this is a ranking of the water you can actually buy or make, judged on one axis only: how much limescale it leaves behind. Taste matters too, but that’s a separate fight for another day.

The numbers that actually predict scale

Before any bottle, learn two words: hardness and alkalinity.

Hardness (GH, general hardness) is the calcium and magnesium in the water. Those are the minerals that precipitate out as scale when you heat them past roughly 140°F. Alkalinity (KH, carbonate hardness) is the buffering that decides how aggressively that precipitation happens.

The Specialty Coffee Association publishes a target zone for brewing water, and it lines up neatly with what keeps boilers clean. You can read their water standards work if you want the full chemistry.

Total hardness is measured in ppm (parts per million) or grains per gallon. One grain equals about 17.1 ppm. Aim for 50-100 ppm total hardness and 40-70 ppm alkalinity. Below that, water gets corrosive; above it, scale climbs fast.

A $12 TDS pen gives you a rough total-dissolved-solids reading in seconds. A $6 API GH/KH aquarium test kit – the same one fishkeepers use – actually separates the two numbers with drops. Buy both. They’ve saved me more diagnostic time than any tool in my kit.

If your tap water leaves a white ring in the kettle overnight, it will do the same thing to your boiler, only hotter and permanently.

1. Volvic and low-mineral bottled water – the shelf-stable winner

If I had to pick one thing you can grab at a grocery store and pour straight in, it’s Volvic. Its total hardness runs around 60 ppm with alkalinity near 65 ppm, which sits almost dead center in the safe zone.

A 1.5-liter bottle runs about $2 to $3 in the US, so it’s not cheap for daily espresso. But for a machine you use a few times a week, it’s genuinely close to ideal and needs zero preparation.

What to avoid on the same shelf

Skip the “mineral” waters that brag about calcium. Evian sits near 300 ppm hardness – lovely to drink, a scale factory in a boiler. San Pellegrino and Perrier are worse still.

Read the label for calcium and magnesium in mg/L. If calcium is above 40 mg/L, put it back.

Pro tip

Crystal Geyser’s Roaring Spring source and many store-brand “spring” waters land under 80 ppm hardness for well under a dollar a liter. Test a bottle with your GH kit before committing to a case.

2. Filtered tap water – cheapest if your tap cooperates

A Brita or ZeroWater pitcher is the default for most people, and the honest answer is: it depends entirely on your starting water.

A standard Brita cartridge is carbon-based. It fixes chlorine and taste but barely touches hardness – I’ve tested Brita-filtered water in hard-water regions and watched it read 220 ppm going in and 210 ppm coming out. That is not scale protection.

ZeroWater is different. It uses ion exchange and strips TDS down toward zero, which swings you to the opposite problem: water so soft it turns corrosive and reads flat and sour in the cup.

Where filters do work

If your tap starts in the 120-180 ppm range, a filter designed for hardness – like a Peak Water pitcher with an adjustable dial, around $50 plus cartridges – can bring it into the 60-100 ppm target on purpose. That’s the sweet spot for filtered water: moderate tap, adjustable filter.

Safety first

Never run pure distilled or fully deionized water (ZeroWater output) as your only water in a machine with an exposed heating element. Ultra-pure water is aggressive toward metal and can also confuse the water-level probes on machines like the Gaggia Classic, causing dry-firing.

3. Remineralized water – building the perfect tank from scratch

This is what I run at home, and what I set up for every customer who’s already killed one machine to scale.

You start with a blank canvas – distilled or reverse-osmosis water at near-zero TDS, about $1 a gallon at any pharmacy – then add back exactly the minerals you want. No calcium surplus, no guesswork.

Third Wave Water and packet mixes

Third Wave Water sells little capsules you drop into a gallon of distilled. The Espresso Profile is formulated for machines and lands around 80-90 ppm. A box of 12 sachets is roughly $17, so about $1.40 per gallon on top of the distilled base.

It’s the no-thinking option and it’s genuinely good. The downside is ongoing cost if you pull a lot of shots.

The DIY route

For pennies, mix your own. My standing recipe for a machine boiler:

  • Start with 1 gallon (3.78 L) of distilled water
  • Add roughly 0.10 g potassium bicarbonate for buffering (KH)
  • Add roughly 0.15 g Epsom salt (magnesium sulfate) for hardness (GH) – magnesium, not calcium, so it scales far less
  • Shake, then verify with your GH/KH kit and adjust

A $0.01 gram scale reading and a $10 bag of potassium bicarbonate will outlast your machine. Leaning on magnesium instead of calcium is the trick – you get the flavor extraction without the rock-hard calcium carbonate crust.

Good to know

Scale is mostly calcium carbonate. By building hardness from magnesium sulfate rather than calcium, remineralized water gives you the mouthfeel and extraction benefits of “hard” water with a fraction of the boiler buildup.

Descaling still matters – just far less often

Good water buys you time; it doesn’t grant immunity. Even at 70 ppm you’ll lay down a thin film over a few years, so keep a schedule.

Run water in the target zone and most machines only need descaling every 6-12 months instead of every 2-3. Test your tap first. A TDS pen and a GH/KH kit cost less than a single service call and tell you exactly which path you’re on.

If your tap is soft-to-moderate, a hardness-adjusting filter is the cheapest long-term answer. If it’s hard, stop filtering and start building – distilled plus a Third Wave capsule or my magnesium recipe.

Either way, the goal is the same boring number: somewhere between 50 and 100 ppm, going in cool and clean, so I never have to add your heating element to the shoebox.
